Casper Eggplant
This white friendly ghost eggplant is absolutely stunning, with glossy, smooth ivory skin that has a striking appearance when raw. Its mild, mushroom-like flavor makes it a versatile addition to any dish. Our earliest eggplants, with a first harvest date of July 31th. That means this will be coming VERY SOON.
Interesting fact, 18th century domesticated eggplants originating from India and China often featured white or yellowish skin and looked much more like bird or hen eggs, which is why they were originally named "eggplants". While commercial farming shifted heavily toward large purple varieties due to easier shipping and less visibility to bruising. heirloom white types like Casper have been preserved by home gardeners and small-scale farms for short-season suitability and delicate culinary texture.
