The suspense has you checking for that red bottom, hoping, and waiting. But at the end, the wait is worth it. Not only do they look magnificent in any dish, but they also maintain a firm meaty texture even when at peak ripeness.

Fun facts, the first dark purple tomatoes bread to maximize anthocyanin skin pigmentation (that same antioxidant that makes blueberry's the smart food) where developed at Oregon State University. Go Bev's!! The black beauty variety is a descendant in that genealogy and is a true heirloom.
